Dabeli is a very popular snack in India. It is originated in
the Kutch area of Gujarat. It is a snack made with boiled potato combined with
chopped onion, garlic, meetha chutney, spicy masalas and often sprinkled with
pomegranate and sew. It is a very popular street food in areas of Mumbai,
Gurgaon and Gujarat.
“How to make a Dabeli?” – As intriguing as it seems, making
a Dabeli is one of the simplest processes there is. Just needs a little love
and patience. Make the whole wheat bread by making the dough earlier and adding
yeast so that it ferments. After the bread is ready on the next day, we need to
prepare the mixture. For that we need to mix one spoon of dried red chilli
powder, coriander powder, and 1/2 inch of cinnamon, 2-3 cloves, as well as ½
teaspoon cumin seeds.
Further to make the potato filling one needs to follow
through a few more steps. Take 3 medium sized mashed, boiled and peeled
potatoes. One very finely chopped onion, 2 teaspoon dabeli masala, 1 pinch of
asafetida, ½ teaspoon cumin, 2 table spoon tamarind dates chutney, ¼ cup grated
coconut, ¼ cup grated pomegranate seeds, ¼ cup chopped coriander leaves, 2
table spoon oil, 2 table spoon water, salt.
You are almost there, just need to apply a few more touches.
For red garlic chutney one needs to soak 2-3 chillies for 30-40 minutes.
1/2garlic, ½ teaspoon lemon juice and salt to taste.
Now comes the moment of truth. We need 4-5 pavs, ½ cup
roasted peanuts, ½ cup chopped coriander leaves, ½ cup sev, ½ cup pomegranate
seeds, garlic chutney and sweet tamarind chutney. Some say, serving a dish is
an art.
Making dabeli masala recipe is
a lot of fun! Dry roast all the red chilli, cumin, cloves, cinnamon and
coriander seeds and mix them in a grinder. Keep the powder aside.
To make the red chutney; in a grinder add soaked red
chillies, garlic, lemon juice and salt to taste.
To make potato stuffing; in a pan add little oil and add
onion, hing, tamarind chutneys and then the mashed potatoes. Add the dabeli
masala and stir and fry it well. When the potato stuffing is mixed, add grated
coconut and coriander leaves and pomegranate seeds.
In order to serve the dabeli assemble the ingredients in a
plate, applying tamarind chutney on one bun and red chutney on other side of
bun, add the potato mash, sprinkle some chopped coriander and sev along with
pomegranate seeds, roasted peanuts and dabeli masala. Cover the other side with
the pun. Add some chutney and sprinkle sew again along with coriander leaves on
top. To make it spicier, one can add roasted spicy garam masala too and amchur
